What it does

Ham heats by cure state as much as weight: smoked halves needing cooking run 22 to 25 minutes per pound to 145 F plus rest, while fully cooked halves only reheat to 140 F and spiral cuts finish fastest per pound. Fresh legs cook longest at 35 to 40 per pound.

The tool above takes the cut with weight in pounds or kilos. It returns the heat range with endpoint and oven beside it. The default 6 lb smoked half gives 2 h 12 min to 2 h 30 min at 325 F to 145 F plus rest.

Times and endpoints follow federal roasting charts: smoked cook-before-eating and fresh legs at 145 F with 3 minutes rest, USDA-inspected cooked hams reheated to 140 F with all others to 165 F. The metric mirror of 2.72 kg lands on the same range.

Labels decide the target before math starts. Cook-before-eating, fully cooked, and fresh read differently on the package, and thermometers rule every category over clocks.

How to use

  1. Pick pounds or kilos.
  2. Pick the exact cut and cure state.
  3. Type the weight inside the cut band.
  4. Plan around the high end of the range.
  5. Verify endpoint with a thermometer.
  6. Rest uncooked cuts 3 minutes, tented.

Formula

Time = weight x min per lb by cut: smoked half 22-25, whole 18-20, cooked half 18-24, spiral 10-18, fresh half 35-40, loin 20.
min/lb
Cut rate at 325 F, loin at 350 F.
145 F
Pull for uncooked and fresh with 3 min rest.
140 F
Reheat for USDA-inspected cooked ham.

Kilos convert first (x 2.20462) into identical pound math. Country ham boils 20 to 25 min per lb after soaking, outside this page bands.

Worked example

Example: 6 lb smoked half

Imperial defaults: 6 lb smoked half bone-in at 325 F.

  1. Rate: 22 to 25 min per lb.
  2. Low: 6 x 22 = 132 min, which is 2 h 12 min.
  3. High: 6 x 25 = 150 min, which is 2 h 30 min.
  4. Pull: thermometer reads 145 F (63 C).
  5. Rest: 3 minutes minimum before carving.
  6. Tool shows the range with 145 F plus rest at 325 F.

Limits

  • Listed cuts and bands only.
  • Country ham needs soak and boil method.
  • Canned and vacuum cuts use own rows.
  • Oven thermostats drift; thermometers rule.

Common mistakes

  • Reheating non-inspected ham to 140 F.
  • Skipping rest on uncooked cuts.
  • Using smoked rates on fresh legs.
  • Trusting time over thermometers.
  • Slicing spiral ham cold for serving.
