Turkey Roast Time Calculator
USDA roast time, safe temperature, and thaw days for any bird size.
What it does
Turkey timing follows weight brackets, not a single minutes per pound line, because heat penetrates slower as birds grow. USDA timetables give low to high ranges at 325 F so ovens that run cool still finish safely inside the window.
The tool above takes the bird weight in pounds or kilos with a stuffed or unstuffed switch. It returns the roast range, the 165 F safe temperature for meat and stuffing, and the fridge thaw days at 24 hours per 4 lb.
The default 16 lb unstuffed bird roasts 3 h 45 min to 4 h 15 min, rests 20 to 30 minutes, and needs 4 fridge days to thaw. The metric mirror of 7.25 kg lands on the same roast range with the same 4 thaw days.
Times and temperatures follow USDA Food Safety and Inspection Service turkey tables with FoodSafety.gov thaw charts beside them. Both name 165 F (74 C) as the safe line for every part of the bird.
How to use
- Pick pounds or kilos to match your scale.
- Enter the thawed bird weight, 8 to 24 lb.
- Set stuffed only when the cavity holds stuffing.
- Plan the meal around the high end of the range.
- Verify every part with a thermometer; time never proves safety.
Formula
- brackets
- USDA time bands widening with bird size.
- 165 F
- Safe internal temp for meat and stuffing.
- 4 lb
- Fridge thaw allowance per 24 hours.
Kilos convert to pounds first (x 2.20462), then run the same brackets, so both systems agree. Stuffed birds use the longer USDA stuffed bands for the same weights.
Worked example
Example: 16 lb unstuffed
Imperial defaults: 16 lb, unstuffed, 325 F oven.
- Bracket: 16 sits in 14 to 18 lb.
- Range: 3.75 to 4.25 hours.
- Convert: 0.75 x 60 = 45 min, 0.25 x 60 = 15 min.
- Result: 3 h 45 min to 4 h 15 min with 165 F checks.
- Thaw: 16 / 4 = 4 days. Tool shows the range plus 4 days thaw.
Reference table
| Weight | Roast range | Thaw |
|---|---|---|
| 8 to 12 lb | 2 h 45 min to 3 h | 2 to 3 days |
| 12 to 14 lb | 3 h to 3 h 45 min | 3 to 4 days |
| 14 to 18 lb | 3 h 45 min to 4 h 15 min | 4 to 5 days |
| 18 to 24 lb | 4 h 15 min to 5 h | 5 to 6 days |
Limits
- Whole turkey brackets 8 to 24 lb; breasts and parts differ.
- Oven thermostats drift; thermometers rule over clocks.
- High altitude and convection shift browning and timing.
- Brines and injections do not lower the 165 F line.
Common mistakes
- Trusting pop up timers instead of a real thermometer.
- Skipping the stuffing center temperature check.
- Thawing on the counter, which grows bacteria outside.
- Carving without resting so juices run out.
- Planning on the low end and serving late.
Try it yourself
Quick checks. Answers sit tucked under each question.
12 lb unstuffed?
3 h to 3 h 45 min, thaw 3 days.
20 lb unstuffed thaw?
20 / 4 = 5 fridge days.
Safe temp for stuffing?
165 F (74 C) at the center, same as meat.
Questions
How long per pound?
No single rate; use brackets. A 16 lb bird roasts 3 h 45 min to 4 h 15 min at 325 F.
What temperature is safe?
165 F (74 C) in breast, thigh, and stuffing center.
How do I thaw safely?
Fridge only, 24 hours per 4 lb. A 16 lb bird needs 4 days.
Stuffed or not?
Unstuffed cooks faster and more evenly. Stuffed birds need the longer bands plus center checks.
Should I trust the clock?
Only for planning. A thermometer proves each part reached 165 F.
How long to rest?
20 to 30 minutes tented, which also lets temperatures even out.
