What it does

Yogurt sets when starter cultures acidify warm milk. Home batches often inoculate at two percent: twenty milliliters per liter. Too little stalls, too much sours fast.

The tool above takes milk volume and percent and returns starter, total mix, and rate. The defaults 1000 ml at 2 percent match the worked example, so the page opens showing 20 ml. Switch to imperial for fluid ounces.

Starter is milk times percent over 100. Total adds starter back. Rate scales to ten times percent in ml per liter, or 0.32 times percent in fl oz per quart. Here 2 percent gives 20 ml/L.

Use plain live culture yogurt or freeze dried direct set. Heat milk to denature, cool to inoculation temp per recipe, hold warm until set, then chill. Sanitize jars to favor cultures over spoilers.

This page shows the formula, one full hand checked example at 1000 ml, a reference table, and practice checks that run through the tool in both unit systems.

How to use

  1. Pick Metric (ml) or Imperial (fl oz).
  2. Type milk volume.
  3. Type starter percent, often 2.
  4. Read Starter needed.
  5. Read Total mix for vessel size.
  6. Heat, cool, inoculate, hold, chill per recipe.

Formula

Starter = milk x pct / 100. Total = milk + starter. Rate metric = pct x10 ml/L.
milk
Milk volume.
pct
Starter percent.
rate
20 ml/L or 0.64 fl oz/qt at 2 percent.

Volume percent here. For weight with dense starters, weigh for tighter repeatability.

Worked example

Example: 1000 ml at 2 percent

Culture a liter of milk at two percent starter.

  1. Starter: 1000 x 2 / 100 = 20 ml.
  2. Total: 1000 + 20 = 1020 ml.
  3. Rate: 2 x 10 = 20 ml/L.
  4. Imperial mirror 33.8 fl oz gives 0.68 fl oz.
  5. Method: heat, cool, stir starter, hold warm.
  6. Chill after set, not before.

Limits

  • Volume percent only.
  • Live cultures assumed. Dead starter never sets.
  • No time-temp model here. Follow recipe hold.
  • Sanitation outside. Dirty jars spoil batches.

Common mistakes

  • Inoculating hot milk that kills cultures.
  • Stirring after set and thinning cups.
  • Using flavored starter with inhibitors.
  • Scaling percent without scaling vessel.
  • Chilling before set completes.
