Cheese Yield Calculator
Cheese pounds from milk gallons and style.
What it does
Cheese is milk minus whey, so yield runs on weight ratios that shift with moisture: hard cheddars near ten to one, mozzarella near eight and a half, fresh soft near five, sheep milk near four.
The tool above takes milk with cheese style. It returns cheese weight with milk weight and the ratio beside it, in pounds or kilograms.
The defaults run 5 gal of milk to cheddar: 43 lbs of milk at 10 to 1 gives 4.3 lbs of cheese. The metric mirror (18.9 L) gives 19.5 kg of milk with 1.95 kg of cheese.
Ratios follow New Mexico State cheese making guidance with Michigan State dairy notes matching: about 10 pounds of cow milk per pound of cheese, near 4 pounds of sheep milk per pound.
How to use
- Pick imperial (gallons) or metric (liters).
- Enter milk going into the vat.
- Pick the cheese style ratio.
- Read cheese weight first.
- Read milk weight beside it.
- Age and trim after the make.
Formula
- 8.6
- Pounds per gallon of whole milk.
- ratio
- 10 cheddar, 8.5 mozzarella, 5 fresh, 4 sheep.
- weight
- Ratios run on pounds, not gallons.
Fat, protein, moisture, and aging move real vats around the rule: parmesan styles run past ten to one while acid set fresh cheeses hold more water. Metric inputs convert liters through gallons to pounds before the same ratio.
Worked example
Example: 5 gal to cheddar
Defaults: imperial, 5 gal milk, cheddar 10 to 1.
- Milk: 5 x 8.6 = 43 lbs.
- Cheese: 43 / 10 = 4.3 lbs.
- Tool shows 4.3 lbs cheese, 43 lbs milk.
- Mozzarella check: 43 / 8.5 = 5.06 lbs.
- Metric mirror gives 1.95 kg from 19.5 kg.
- One gallon alone gives 0.86 lb cheddar.
Reference table
| Style | Ratio | Cheese |
|---|---|---|
| Cheddar | 10 to 1 | 4.3 lbs |
| Mozzarella | 8.5 to 1 | 5.06 lbs |
| Fresh soft | 5 to 1 | 8.6 lbs |
| Sheep milk | 4 to 1 | 10.75 lbs |
Limits
- Rules, not vat guarantees.
- Fat and protein shift yields.
- Aging shrinks wheels further.
- Acid set types hold more water.
Common mistakes
- Ratioing gallons instead of pounds.
- One ratio for every style.
- Skipping milk weight 8.6 per gal.
- Counting whey as cheese.
- Forgetting trim and age loss.

Quick checks. Answers sit tucked under each question.
5 gal to mozzarella?
43 lbs milk gives 5.06 lbs.
1 gal to cheddar?
8.6 lbs milk gives 0.86 lb.
Why weight basis?
Pounds per gallon shift with fat and temperature.
Questions
How much milk per pound of cheese?
About 10 lbs for cheddar; 1.25 gal rounds the same rule.
Mozzarella yield?
Near 8.5 to 1 by weight, wetter than cheddar.
Sheep milk yield?
Near 4 to 1; richer solids set more curd.
Gallon of milk weight?
About 8.6 lbs whole milk.
Fresh cheese yield?
Near 5 to 1 with high moisture held in.
Why less than rule?
Low solids, whey loss, trim, and aging all take shares.
