What it does

Hummus scales badly by eye. Too little tahini tastes beany and flat, while too much lemon turns sharp overnight. Counting servings first keeps beans, paste, and acid in balance.

The tool above multiplies a tested per serving base. Twelve servings need 3 cups of chickpeas (2 cans) with 8 Tbsp tahini and 6 Tbsp lemon, plus matching oil, 2 garlic cloves, and 2 tsp salt. The metric match is 710 ml chickpeas with 118 ml tahini.

One can anchors the batch: about 1.5 cups drained toward 6 servings. Tahini and oil pour equally while lemon runs lighter, and garlic with salt step one per six servings. Smooth beans before seasoning, never after.

Texture comes from process and water. Blend chickpeas with ice water until fluffy, drizzle oil late, and rest chilled so flavors settle. Serve with paprika and a spoon of oil on top.

How to use

  1. Pick imperial (cups, Tbsp) or metric (ml).
  2. Enter servings: 12 matches the example.
  3. Read chickpeas and cans first.
  4. Read tahini.
  5. Read lemon, garlic, and salt.
  6. Blend beans smooth, then season.

Formula

Chickpea cups = servings x 0.25. Tahini Tbsp = servings x 0.667. Lemon Tbsp = servings x 0.5. Oil matches tahini.
servings
Quarter cup servings needed.
0.25
Chickpea cups per serving.
0.667
Tahini Tbsp per serving.

A 15 oz can drains to about 1.5 cups and yields about 6 quarter cup servings. Per serving math gives chickpeas 0.25 cup with tahini near 2 tsp, oil near 2 tsp, and lemon near 1.5 tsp, while garlic and salt run one clove and one tsp per 6 servings. Cups round to quarters and spoonfuls to halves.

Worked example

Example: 12 servings

Imperial defaults: 12 servings. These are also the default values, so the page opens on this answer.

  1. Servings: 12 at quarter cup each.
  2. Chickpeas: 12 x 0.25 = 3 cups, which is 2 cans.
  3. Tahini: 12 x 0.667 = 8.004, shown as 8 Tbsp.
  4. Lemon: 12 x 0.5 = 6 Tbsp.
  5. Oil matches tahini at 8 Tbsp; garlic 12 / 6 = 2 with salt 2 tsp.
  6. Tool shows 3 cups chickpeas (2 cans) with 8 Tbsp tahini and 6 Tbsp lemon, 2 garlic, 2 tsp salt.
  7. Metric match: 710 ml chickpeas with 118 ml tahini.

Quick checks. Answers sit tucked under each question.

6 servings?

1.5 cups chickpeas (1 can) with 4 Tbsp tahini and 3 Tbsp lemon, 1 garlic, 1 tsp salt.

24 servings?

6 cups chickpeas (4 cans) with 16 Tbsp tahini and 12 Tbsp lemon, 4 garlic, 4 tsp salt.

Questions

How many chickpeas for 12?

Multiply servings by 0.25 cups. Here 12 x 0.25 = 3 cups, or 2 cans.

How much tahini?

Multiply servings by 0.667 Tbsp. Here 12 x 0.667 = 8 Tbsp.

Serving size?

A quarter cup serving, about 60 g; a 2 Tbsp dip is half a serving.

Yield per can?

One 15 oz can, about 1.5 cups drained, makes about 6 servings.

Order of operations?

Blend smooth first, then salt and lemon to taste at the end.

Exact for every can?

No. Bean size and draining shift cups, so cans anchor the count.
