What it does

Dutch ovens bake with coals split top and bottom: diameter times two sets 350 F with two thirds on the lid, and each 25 F step adds or removes two. This page runs that rule in inches or cm with the split.

The default is a 12 in oven at 350 F. Total is 24 coals with 16 on top and 8 below. Metric converts 30 cm at 175 C to the same inches and degrees and matches the same 24.

Top bias bakes, bottom bias boils. Breads and cobblers keep the lid heavy while stews flip more heat below; frying runs bottom only. Rotate oven and lid through the bake for even sides.

Coals are planning, not thermostats. Wind steals heat, altitude and cold shift timing, and ashed coals run cooler than fresh, so peek and refresh on long bakes.

How to use

  1. Pick imperial or metric first.
  2. Enter oven diameter.
  3. Enter target temp.
  4. Read total first, then top.
  5. Read bottom last and rotate.

Formula

Total = round(in x 2 + round((F-350)/25) x 2). Top = round(total x 2/3). Bottom = total - top. Metric converts first.

temp
Target temp in F.

The diameter times two rule targets 350 F; each 25 F step adds or removes about 2 coals with roughly two thirds on the lid for baking. Metric converts cm to inches and C to F inside so both modes agree. Wind and worn coals need watching, not math.

Worked example

Example: 12 in at 350 F

12 in oven at 350 F (metric 30 cm at 175 C).

  1. Base: 12 x 2 = 24 coals at 350 F.
  2. Adjust: (350 - 350)/25 x 2 = 0.
  3. Total stays 24 coals.
  4. Top: 24 x 2/3 = 16 on top.
  5. Bottom: 24 - 16 = 8 below.
  6. Tool shows 24 coals both modes.

Limits

  • Baking split only. Frying differs.
  • Rule of thumb, not exact temp.
  • Wind and coal age excluded.
  • One oven and temp per pass.

Common mistakes

  • Even splits for baking.
  • Counting cold ashes as fresh.
  • Skipping rotation mid bake.
  • Mixing C with F steps.
  • Piling all heat below for bread.

Try it yourself

Quick checks. Answers sit tucked under each question.

10 in oven at 350 F?

20 coals (10 x 2), 13 on top, 7 below.

12 in oven at 400 F?

28 coals (12 x 2 + 2 x 2 at 400 F), 19 on top.

Questions

How many coals?

Diameter times 2 at 350 F. Here 24.

Top split?

Two thirds on top. Here 16.

Bottom split?

Total minus top. Here 8.

What is that in metric?

24 coals for 30 cm at 175 C.

Other temps?

Two coals per 25 F from 350. Hotter adds, cooler removes.

Exact temp?

No. Wind, altitude, and coal brand shift real heat.
