What it does

Steamed clams open on their own schedule: littlenecks near 8 minutes, cherrystones near 11, with shut shells staying out of bowls. Wine broth pools the reward.

The tool above takes clam count with size. It returns minutes, broth cups, and the discard rule.

The default 24 littlenecks steams 8 minutes with 3 cups broth. The dozen case needs 2 cups, and cherrystones need 11 minutes.

Fisheries recipes steam littlenecks covered until open in wine with butter and lemon. Seafood guidance repeats the open means done rule with sand scrubbing first.

Serve in shallow bowls with broth poured over and bread alongside. Shucked meats and stuffed bakes follow separate clocks from shell on steaming.

How to use

  1. Type the clam count.
  2. Pick littleneck or cherry.
  3. Read minutes first.
  4. Read broth beside it.
  5. Read the discard rule last.
  6. Serve at once in bowls.

Formula

Minutes: 8 littleneck, 11 cherrystone. Broth cups = ceil(count / 8). Discard unopened.

NOAA fisheries clam recipes steam littlenecks covered 6 to 10 minutes until open with wine broth. Extension seafood guidance mirrors the same open means done rule with discard for shut shells. Counts scale broth near a cup per 8 clams.
